How to cook Mussels Spanish-style?

Ingredients:
2 lbs of fresh mussels
1 onion, finely chopped
3 garlic cloves, minced
1 tomato, diced
1 tsp of paprika
1/2 tsp of saffron
1/2 cup of white wine
1/4 cup of olive oil
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
Instructions:
Clean and debeard the mussels: Scrub the shells of the mussels under cold running water and remove any barnacles or debris. Pull the "beard" (a small, fibrous strand) off each mussel and discard. Set the cleaned mussels aside.
Sauté the onion and garlic: Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
Add the tomato and spices: Add the diced tomato, paprika, and saffron to the saucepan. Stir well to combine, and cook for a few minutes until the tomato has softened.
Add the mussels and wine: Add the cleaned mussels to the saucepan, and pour in the white wine. Stir well to coat the mussels with the sauce.
Steam the mussels: Cover the saucepan with a lid and let the mussels cook for 5-7 minutes, or until the mussels have opened up. Discard any mussels that have not opened.
Garnish and serve: Remove the pan from the heat and sprinkle with fresh parsley. Serve the mussels immediately with crusty bread to soak up the flavorful broth.
