How to cook Octopus Salad?

Ingredients:
1 lb fresh octopus
2 celery stalks, chopped
1 red onion, chopped
1 red bell pepper, chopped
1/4 cup fresh coriander, chopped
1/4 cup fresh basil, chopped
2 tbsp capers
2 tbsp red wine vinegar
1/4 cup extra-virgin olive oil
Salt and pepper, to taste
Lemon wedges, for serving
Instructions:
Rinse the octopus under cold water and remove the beak from the center of the tentacles.
Bring a large pot of salted water to a boil. Add the octopus and reduce the heat to a simmer. Cook for 30-40 minutes, or until the octopus is tender.
Remove the octopus from the water and let it cool. Once cooled, cut it into bite-sized pieces.
In a large bowl, combine the octopus, celery, red onion, red bell pepper, coriander, basil, and capers.
In a separate bowl, whisk together the red wine vinegar, olive oil, salt, and pepper.
Pour the dressing over the octopus salad and toss to combine.
Chill the octopus salad in the refrigerator for at least 30 minutes before serving.
