How to cook ‘Polvo á Lagareiro’?

1 kg of octopus
1 kg of potatoes
4 cloves of garlic
1/2 cup of olive oil

Instructions:
Begin by cleaning the octopus. Remove the head and the ink sack, then wash thoroughly. Cut the tentacles into pieces and set aside.
Peel the potatoes and cut them into thin slices. Place them in a baking dish and season with salt, pepper, and a drizzle of olive oil. Bake in a preheated oven at 200°C for 30 minutes.
While the potatoes are cooking, prepare the octopus. In a large pot, bring water to a boil and add the octopus. Cook for 15 minutes or until tender.
In a separate pan, heat the olive oil and garlic over medium heat until the garlic is fragrant and slightly golden.
Add the cooked octopus to the pan with the garlic and olive oil, and fry for a few minutes until slightly crispy.
Remove the potatoes from the oven and place the octopus on top. Drizzle with more olive oil and garnish with parsley.
Your "Polvo á Lagareiro" is now ready to serve!
