How to cook ‘Bacalhau com Natas’?

Ingredients:

  • 1 1/2 pounds of salt cod

  • 1 pound of potatoes

  • 1 onion, diced

  • 3 cloves of garlic, minced

  • 2 tablespoons of olive oil

  • 1 bay leaf

  • 2 cups of heavy cream

  • 1/2 cup of milk

  • 4 tablespoons of butter

  • Salt and pepper to taste

  • Grated nutmeg to taste

  • 1 cup of grated Parmesan cheese

  • Fresh coriander to garnish


Instructions:

  1. Start by soaking the salt cod in water for 24 to 48 hours, changing the water every few hours to remove the salt. This will rehydrate the fish and make it more tender.

  2. Preheat the oven to 400°F. Peel the potatoes and cut them into small cubes. Boil the potatoes until they are tender, then set them aside.

  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté until they are softened and translucent.

  4. Add the soaked salt cod and bay leaf to the skillet, and stir gently to combine. Cook the cod for about 5-7 minutes, until it's cooked through and starting to flake.

  5. Remove the bay leaf from the skillet and transfer the cod mixture to a baking dish. Add the boiled potatoes to the dish and gently mix everything together.

  6. In a saucepan, heat the heavy cream, milk, and butter over medium heat. Add salt, pepper, and grated nutmeg to taste.

  7. Once the mixture comes to a simmer, remove it from the heat and pour it over the cod and potato mixture in the baking dish. Sprinkle the grated Parmesan cheese over the top.

  8. Bake the Bacalhau com Natas in the preheated oven for about 30-35 minutes, or until it's golden brown and bubbling.

  9. Garnish with fresh coriander and serve hot.
