How to cook ‘Bacalhau á Lagareiro’?

Updated: May 24, 2023

Bacalhau á Lagareiro, a traditional Portuguese dish, is a simple but delicious way to prepare codfish. The dish is named after the method of cooking, which involves roasting the codfish in the same way that olives are traditionally pressed in a lagar (winepress). The result is a succulent and flavorful dish that is perfect for a special occasion or a simple weeknight dinner.

Ingredients:

  • 4 pieces of salt cod (about 1 1/2 pounds)

  • 2 pounds of potatoes

  • 1 head of garlic

  • 1/2 cup of olive oil

  • Salt and pepper to taste

  • Fresh coriander to garnish

Directions:

  1. Soak the salt cod in water for 24 to 48 hours, changing the water every few hours to remove the salt. This will rehydrate the fish and make it more tender.

  2. Preheat the oven to 400°F.

  3. Peel the potatoes and cut them into thick wedges. Place them in a baking dish and sprinkle with salt and pepper.

  4. Drizzle the potatoes with olive oil and toss them to coat.

  5. Place the baking dish in the oven and roast the potatoes for 30 to 40 minutes, or until they are golden and crispy.

  6. While the potatoes are roasting, prepare the codfish. Rinse the fish under cold water and pat it dry with paper towels.

  7. Cut the head of garlic in half horizontally and place it in a small baking dish.

  8. Place the codfish on top of the garlic, skin side up.

  9. Drizzle the codfish with olive oil and sprinkle with salt and pepper.

  10. Place the baking dish in the oven and roast the codfish for 20 to 25 minutes, or until it is cooked through and golden brown.

  11. To serve, place the codfish and garlic on a platter and surround it with the roasted potatoes. Garnish with fresh coriander and serve hot.

Bacalhau á Lagareiro is a hearty and satisfying dish that is perfect for a cold winter evening. The combination of crispy potatoes and succulent codfish, along with the rich flavor of olive oil and garlic, is simply irresistible. The dish is also easy to make and requires only a few simple ingredients, making it a great option for a weeknight dinner or a casual gathering with friends and family.

In addition to being delicious, Bacalhau á Lagareiro is also a great way to explore the rich culinary heritage of Portugal. Codfish is a staple ingredient in Portuguese cuisine, and the dish is a testament to the country's long history of seafaring and trade.
