How to cook Strogonoff (beef or chicken)?

Ingredients:
1 lb beef sirloin'or chicken sliced into thin strips
1 onion, diced
1 garlic clove, minced
8 oz mushrooms, sliced
2 tbsp butter
2 tbsp flour
1 cup beef broth
1 tbsp tomato paste
1 tbsp Dijon mustard
1/2 cup sour cream
Salt and pepper, to taste
Rice, cooked according to package instructions
Instructions:
Heat a large skillet over medium-high heat. Add the beef strips and cook until browned on all sides. Remove the beef or chicken from the skillet and set it aside.
In the same skillet, add the onion and garlic and cook until the onion is translucent.
Add the mushrooms and cook until they release their juices and are tender.
Push the mushrooms and onions to one side of the skillet, and add the butter to the other side. Once the butter is melted, whisk in the flour to create a roux.
Gradually pour in the beef or chicken broth while whisking continuously to prevent lumps from forming. Add the tomato paste and Dijon mustard and stir to combine.
Bring the sauce to a simmer and cook for 5-7 minutes, or until it thickens.
Remove the skillet from the heat and stir in the sour cream. Season with salt and pepper to taste.
Serve the Stroganoff over cooked white rice.
